I did something similar when I travelled to Puglia last May, train from Darlington.  I stayed at the Sofitel which is linked to the North Terminal so no need for any transport early in the morning.  I think the flight was from the South Terminal but there is a shuttle between the terminals which runs frequently and all hours - takes abut 5 minutes.  There are other hotel options which you could check out on Holiday Extras.

Love Italy anyway but am really looking forward to this different part of it to explore and it looks a pretty full itinerary!

I included the optional excursions to Lecce and the afternoon/evening visit to Monopoli and found the general pace of the holiday fairly relaxed, even with the full itinerary, with no particularly long journeys.  I've been to other parts of Italy and found Puglia different and mostly uncrowded.

I've  also booked both optional excursions so looking forward to it now

I'm actually going on the May trip to Puglia and getting very excited now.  Not sure if you have booked somewhere yet but I have used the Hilton London Gatwick Airport which is at South Terminal. It is really close to departures and signposted through the short stay car park and from the station.
