I did this as my very first JY holiday last year, and posted a review Albi & Carcassonne my first JY holiday, on 9 June 2013.
Had the weather been better this would have been a good choice. Evening meals were only included for the first and last nights, and since the hotel was about 25 minutes from either the Old Town or the New Town this was a trek, not helped by the fact that the Monday, (meal not included) was a bank holiday and we couldn't even get a meal in the hotel. There is a bar type place next door, reeked of smoke and looked a but rough - didn't fancy it at all. As you are probably aware, France closes at mid-day on Monday until Tuesday morning. Afrer this experience I always try to find a tour that has evening meals included.
That was the only problem really, Tom, the tour guide, English but lives locally, was superb and always ready to help. Scenery good, lunches in local restaurants, always good. Coach driver always helpful.
