What currency would you recommend I take with me ?  Euros, pound or dollar ?  Was going to use my cards when I get there but thought I should take some cash too

You should be able to exchange both pounds sterling or US dollars. Just remember to take notes that are in a good condition (i.e. not torn).

I'm heading in that direction myself later this year and am planning on taking sterling and my plastic.
