I am wanting to do an Alcatraz tour and from other posts I see it is best to pre-book these. Would you be able to tell me from the itinery what would be my opportune time to book this common sense would tell me after lunch-time on the second day but thought it worth a check.

You are right - the afternoon of day 2 is the best time to visit Alcatraz as you will have some free time in the city. Bear in mind there is an optional harbour cruise at the end of the morning city tour. If you don't want to do the boat trip, you could book Alcatraz for about 1pm. If you do want to take the boat trip, I'd book Alcatraz for 2pm onwards.
