i'm thinking of doing this trip next year, could you tell me the most popular time of year for it, and if I wanted to spend an extra night in Vegas at the end, what are the implications for room cost and different flights?

I assume you mean America's national Parks & Canyons (and not the Little Big Horn version).

If so, these tours are very popular and most departures are fully booked or very nearly. Over the past two years none has had less than 30 people and most have been nearer 40.
