Personally, I wouldn't have a ring reset on holiday in case the job ended up taking longer than expected. It might add an unwelcome pressure to your stay if you are worrying about whether it will be done before you have to leave. You might save a few pounds but it would be a shame if it affected your holiday.
May 1-3 is Labour Day in China. It's an important holiday there but you will probably find that most of the big shops are open.
