I did the CAB tour in 2012 (TS version but identical itinerary) and it is fantastic - I loved every part of it and travelling over the Andes was a brilliant experience.  I strongly recommend it and it is one of my top three tours ever.  On the other hand, I have my eye on the Central America tour and the itinerary looks excellent - even though I've done some parts of it through other tours I am strongly considering it for 2019 if it's around then!  Given that the CAB tour has been around for a few years and seems to be quite popular I might suggest going for the Central America tour first - one departure has been dropped already (I think it was for Nov this year) so it mightn't be around for too long!
