I am due to travel to Cambodia & Vietnam later this month, and I am having difficulty finding anywhwere that sells any Cambodian or Vietnamese currencies.

I've trawled the internet, and many sites suggest just taking low-denomination US dollars. Will this be OK?

Yes, US dollars will be accepted in that part of the world. You might pay slightly more for things but you'll find it easier to keep track of what you're spending and it won't matter if you have any money left over.
