Hi! I did the TS South Africa Whale Watching with the Victoria Falls add on a couple of years ago. I went on most of the offered excursions, well the ones you could fit in! The Livingstone Express was a good evening - the train stops on the bridge and you can walk up to the engine and climb into the cab - ask nicely and you get to blow the whistle! As I had never been in the cab of a steam train I jumped at the chance and blew that whistle 3 times!
I haven't checked for other current threads on the add on so this may have already been covered - however I did the longer helicopter ride which was a combination of amazing views over the falls and an adrenalin zoom down the gorge. Try and get in the front seats! As it took place early afternoon there was not much wildlife around. One girl did a microlight flight in the early morning - timing all to do with air currents - over the falls and further out to look for wildlife of which she saw a lot! Certainly more than me.
Chobe is a definite must for the experience and the wildlife.
I loved this holiday, from Cape Town (I did go to Robben Island - picked up a ticket on the day) all the way to Victoria Falls, via a snow storm  in Johannesburg! I am sure you will have a great time.
