I'm just back from a trip to these three countries.  Just take dollars.  I did change some to Dong in Vietnam, but really wasn't necessary and then I had to change it back to $.  Cambodia all dollars.  In Laos they often quote prices in their currency but if you say how much in dollars you'll get a dollar figure. Often if there is change due and it's a small amount you do end up with bits of local currency.

I thought that might be the case, but it is always nice to be reassured.

I would recommend that you take a mixture of dollars and Riel for Cambodia and bring as much as you'd like to spend on other things.
