I'm just back from a trip to these three countries. Just take dollars. I did change some to Dong in Vietnam, but really wasn't necessary and then I had to change it back to $. Cambodia all dollars. In Laos they often quote prices in their currency but if you say how much in dollars you'll get a dollar figure. Often if there is change due and it's a small amount you do end up with bits of local currency.
