As for currency, you will need Hong Kong dollars (the exchange rate is currently around £1 = HK$12) and New Zealand dollars (£1 = NZ$2.2). Personally I would work out how much I would be happy to spend each day and take enough local currency to cover that. If you overspend, you can usually use your bank or credit card to withdraw extra money. Some people prefer the extra security of Travellers' Cheques, but I find them a bit inconvenient to change.
