It is very unusual not to be able to take up the parking offer but I think in this case there was simply no availability. I hope it won't put you off flying from Gatwick in future.
As for your other question, I wouldn't be overly worried about flight times changing. It really doesn't happen that often, but if you want to be absolutely sure I would wait until you receive confirmed flight details with your Final Information, which usually arrives about 2 weeks prior to departure.

Thanks for the info. Are there plans to offer a different hotel at Gatwick that does have car parking? I am now looking to go from Heathrow for any future holidays as you still offer hotel car parking there.
Having read the msgs about flight times changing I am now a bit nervous about booking parking at Gatwick. Would you say it was wise to wait until 2 weeks prior to travelling before booking this?

I'm sorry to hear about the mix-up over your parking but I'm glad to hear you will be getting a refund.
Your flight will be departing from the North Terminal. You might like to try booking discounted car parking through this website. Click on 'Airport hotels & parking' on the left hand side of this page.

Please can you tell me how soon I will know which terminal at Gatwick this holiday leaves from? I was booked on the 'getting to know you' dinner and stopover at a hotel the night before travel but was told yesterday that parking there is no longer an option. (I was told after I had paid and only because I queried the price but will get a refund. Not sure why it wasn't pointed out before my query though).
Anyway now I have to find somewhere else to park and wanted to know the best place.
